Spicy North African condiment for couscous and more, a staple in Tunisian, Moroccan, and Algerian dishes.
Ingredients:
  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 1/2 tsp caraway seeds
  • 150g fresh red chillies, de-seeded
  • 4 garlic cloves, peeled
  • 2.40 gm salt
  • Olive oil, extra
Instructions:
  • In a saucepan over medium heat, toast the cumin, coriander, and caraway seeds, stirring often, for 3-5 minutes until fragrant. Let the seeds cool after toasting.
  • In a food processor bowl, blend red chillies with toasted seeds, garlic, salt, and olive oil until a smooth paste forms.
  • Place the mixture in an airtight jar, ensuring all ingredients are submerged in a thin layer of olive oil. Close the lid tightly and refrigerate for storage.
