Succulent chicken and pineapple skewers marinated in a flavorful blend of soy sauce, brown sugar, sherry, and spices, then grilled to perfection.
Ingredients:
  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons sherry
  • 1 tablespoon sesame oil
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon garlic powder
  • 8 skinless, boneless chicken breast halves - cut into 2 inch pieces
  • 1 (20 ounce) can pineapple chunks, drained
  • skewers
Instructions:
  • Combine soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder in a shallow glass dish. Add chicken pieces and pineapple chunks, ensuring they are fully coated. Refrigerate and let marinate for 1 to 2 hours, covered.
  • Get the grill ready by preheating it to medium-high heat and giving the grate a light coat of oil.
  • Skewer chicken and pineapple alternately, and discard any leftover marinade.
  • Grill the chicken on high heat, turning occasionally, until fully cooked and the juices run clear, for 15 to 20 minutes. Make sure the internal temperature reaches at least 165 degrees F (74 degrees C) when using an instant-read thermometer.
