Try our flavorful Moroccan spiced mince and capsicum stuffed in fluffy pita bread for a simple and delicious family meal.
Ingredients:
500g beef mince
1brown onion, finely chopped
1green capsicum, seeded, finely chopped
1 large ripe tomato, finely chopped
2garliccloves, crushed
62.50 ml finely choppedflat-leaf parsley
62.50 ml finely choppedcoriander
5.00 gm Moroccan spice mix
1/4 tsp cayenne pepper
6pita pockets, halved crossways
18.20 gm olive oil
Greek Style Yoghurt, to serve
Lemon wedges, to serve
Instructions:
Preheat the oven to 240C/220C fan forced. Mix beef, onion, capsicum, tomato, garlic, parsley, coriander, Moroccan spice mix, and cayenne pepper in a large bowl. Season generously with salt and pepper.
Divide the beef mixture into twelve equal portions. Stuff each pita pocket half with the beef, gently pressing it down. Lightly brush the pita breads with olive oil, then wrap each loosely in baking paper and place on a baking tray. Bake for 30 minutes until golden brown and hot throughout. Serve with yogurt and lemon wedges. Enjoy!
