Celebrate the New Year with smoky black-eyed peas cooked with bacon, pork sausage, and tasso ham, paired perfectly with cornbread.
Ingredients:
  • 2 pounds dried black-eyed peas
  • 1.5 pounds smoked pork jowl, cut into 4 pieces
  • 1 pound tasso ham, cut into 1/2-inch pieces
  • 1 onion, chopped
  • 1 stalk celery
  • 2 cloves garlic, minced
  • 3 bay leaves
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil
  • 1 tablespoon Worcestershire sauce
  • 8 strips bacon
  • 2 cups chopped onion
  • 2 cups chopped celery
  • 2 cups chopped green bell pepper
  • 3 cloves garlic, minced
  • 2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®), drained
  • 1.5 pounds smoked andouille sausage, sliced on the bias
  • 1.5 tablespoons white sugar
  • salt and ground black pepper to taste
Instructions:
  • In a large bowl, cover the black-eyed peas with cool water, soaking for 8 hours to overnight. Drain and rinse before using.
  • In a large pot, cover black-eyed peas with water until 1/2-inch above the peas, then bring to a gentle simmer. Stir in pork jowl, tasso ham, chopped onion, celery, minced garlic, bay leaves, parsley, basil, and Worcestershire sauce. Simmer until peas are tender, usually around 2 to 3 hours.
  • Remove and discard the pork jowl, celery stalk, and bay leaves from the pea mixture.
  • Fry bacon in a big skillet on medium-high heat, flipping occasionally, until golden and crispy, around 10 minutes. Place cooked bacon on paper towels to drain, reserving 2 to 3 tablespoons of bacon fat in the skillet. Once cooled, crumble the bacon.
  • Saute 2 cups of diced onion, 2 cups of diced celery, diced green bell pepper, and minced garlic in flavorful bacon drippings over medium heat until the onion is soft, approximately 10 minutes.
  • Combine the delicious blend of onion, tomatoes with green chiles, crispy bacon, and spicy andouille sausage with the peas. Season generously with sugar, salt, and pepper. Let the flavors mingle and simmer for 1 1/2 hours until perfectly blended.
