Elevate your breakfast with endless possibilities: try chorizo, bacon, spinach, or any leftover ingredients on hand.
Ingredients:
  • 125.00 ml sweet corn, drained
  • 3 whole eggs
  • 2.40 gm salt
  • 62.50 ml tasty cheese, grated
  • 4 soft tortilla, charred over flame
  • 1 avocado, sliced
  • 37.60 gm sour cream
  • Hot sauce, to serve
  • Coriander, to serve
Instructions:
  • Place butter in a small fry pan over high heat until it bubbles. Add corn kernels, sprinkle with a pinch of salt, and sauté quickly.
  • In a bowl, combine eggs with a pinch of salt and 2 tablespoons of water. Stir in cheese. Pour the mixture into a pan and cook for 30 seconds. Gently push the eggs around with a spatula, gradually mixing in the corn until the eggs are just cooked over low heat.
  • Char flame-kissed tortillas on stovetop until lightly charred, about 10 to 15 seconds per side.
  • Stuff the egg and corn mix inside, then layer with avocado slices and a dollop of sour cream. Finish with a drizzle of your preferred hot sauce and garnish with fresh coriander leaves and a squeeze of lime.
