Irresistible broccolini side salad with zesty yogurt sauce - a delightful crunch you'll crave.
Ingredients:
  • Sea salt and pepper, to taste
  • 2 bunches broccolini, trimmed
  • 72.80 gm Extra Virgin Olive Oil
  • Sea salt, to taste
  • 90g goat's cheese
  • 250.00 ml Greek-style yoghurt
  • 18.20 gm olive oil
  • Zest, 1 lemon
  • 1 lemon, juiced
  • 62.50 ml pistachios, toasted and roughly chopped
  • 125.00 ml parsley, roughly chopped
Instructions:
  • Heat up the barbecue until it's nice and hot. Coat broccolini with olive oil and sea salt, then grill for 3-5 minutes, flipping once, until it has a light char.
  • Prepare the yoghurt goat’s cheese sauce by blending goat’s cheese, yoghurt, olive oil, and lemon zest until smooth. Season with salt and pepper to taste.
  • Spread the creamy goat cheese sauce as the base on a serving plate or shallow bowl, layer with vibrant broccolini, then generously drizzle with extra virgin olive oil and fresh lemon juice. Sprinkle with crunchy pistachios, fresh parsley, and season with a touch of salt and pepper for perfect balance. Enjoy your masterpiece!
