Try this quick and easy Asian marinated tofu with ready-to-heat rice for a fast and delicious meal!
Ingredients:
  • 80ml soy sauce
  • 60ml mirin
  • 20.00 ml finely grated ginger
  • 1 long red chilli, thinly sliced (optional)
  • 500g firm tofu, cut into 12 x 1cm-thick slices
  • 2 bunches broccolini, trimmed
  • 1 bunch spring onions, trimmed
  • 2 x 250g packets microwaveable brown, wild and red rice
  • 80g sunflower seeds
  • 1 bunch shiso, leaves picked (optional)
Instructions:
  • Combine soy sauce, mirin, minced garlic, grated ginger, and sesame oil in a bowl to create a flavorful marinade.
  • Split the marinade in two. Into one half, mix in chili (if desired) and set it aside. Pour the other half of the marinade into a wide dish. Arrange the tofu in a single layer, flipping to cover with marinade. Let it marinate for 20 minutes, if possible.
  • In a large bowl, immerse broccolini and spring onions in boiling water. Let soak for 2 minutes, then strain.
  • Cook the rice following the package instructions. Preheat a barbecue or chargrill on high heat. Drain tofu, getting rid of the marinade. Lightly oil tofu, broccolini, and spring onions, then grill in batches for 2 minutes on each side until slightly charred.
  • Divide the fluffy rice into individual serving bowls, generously topping each with vibrant broccolini and spring onions. Place diagonally halved tofu on top, followed by a flavorful drizzle of soy and chili mixture. Finish by sprinkling sunflower seeds and fresh shiso for a delightful crunch and burst of flavor.
