Wake up to a savory one-pot breakfast packed with sausage, eggs, and baked beans for a hearty start to your day.
Ingredients:
  • 3 good quality sausages, meat squeezed out of the casing
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 brown onion, grated
  • 3 cloves garlic, grated
  • 400g canned crushed tomato
  • 400g cannellini
  • 10.00 gm smoked paprika
  • 5.00 gm cumin, ground
  • 1 tsp chilli flakes
  • Sea salt, to taste
  • Extra virgin olive oil
  • Chilli flakes, to taste
  • 125.00 ml parsley, roughly chopped
  • Crusty bread, grilled
Instructions:
  • In a medium oven-proof fry pan over medium heat, warm 1 tablespoon of oil. Remove sausage meat from casings and sauté until golden brown. Stir in carrot, zucchini, onion, and garlic, cooking until softened, about 3–4 minutes. Sprinkle the spice mix over the contents and cook for another 1-2 minutes until aromatic.
  • Combine fresh, ripe tomatoes into the mixture and stir gently until everything is well mixed and reaches a simmer. If necessary, add a touch of water to achieve the desired consistency. Finally, blend in the beans.
  • Create 4 wells in the tomato mixture with a spoon, then carefully crack 1 egg into each well. Cook for 6–8 minutes until egg whites are cooked through but yolks are still runny.
  • Present the completed dish at the table, garnishing it with a drizzle of olive oil, a sprinkle of sea salt, a touch of chili, a handful of fresh parsley, and a side of crusty bread for sopping up the delicious sauce.
