Upgrade traditional surf and turf with a modern twist using green prawns as a delicious substitute for abalone.
Ingredients:
  • 1 kilogram beef rib eye steak, on the bone
  • 19.20 gm sea salt
  • 3 king oyster mushrooms, halved
  • 18.20 gm Extra Virgin Olive oil
  • 20.00 gm unsalted butter
  • 18.20 gm Extra Virgin Olive Oil
  • 1 greenlip abalone, cleaned and tenderised, thinly sliced
  • 1 garlic clove, finely chopped
  • 20.00 ml fresh continental parsley, finely chopped
Instructions:
  • Take the steak out of the fridge and let it come to room temperature. Preheat your Weber barbecue on high heat with the lid closed until the grill bars are very hot. Season the steak generously with sea salt on both sides. Grill the steak for 20-25 minutes until it reaches your desired doneness.
  • Brush the mushrooms with olive oil and grill until tender and beautifully charred.
  • Heat a heavy-based frying pan over high heat. Combine butter and olive oil until melted. Add abalone and garlic, stir-fry for 1-2 minutes until abalone is cooked. Remove from heat, toss with parsley, and season with sea salt.
  • Arrange the steak, mushrooms, and abalone on individual serving plates.
