Upgrade comfort food with sweet potatoes for a healthier twist in this simple and satisfying winter meal.
Ingredients:
  • 40.00 ml olive or macadamia oil
  • 3 lean rashers bacon, roughly chopped
  • 600g sweet potato, very thinly sliced
  • 240g ricotta
  • 250ml coconut milk
  • 2.50 gm ground nutmeg
Instructions:
  • Preheat your oven to 200°C and generously grease an 8-cup ovenproof dish. In a large frypan over medium heat, warm the oil. Sauté the bacon until beautifully browned, then set it aside.
  • Working in batches, place the sweet potato slices in the frypan and cook for 2 minutes on each side until they turn a light golden brown. Then, transfer both the bacon and sweet potato to the ovenproof dish.
  • In a bowl, combine the ricotta, coconut milk, and nutmeg, whisking until smooth. Season with salt, then pour the mixture over the sweet potato and bacon.
  • Bake in the oven for 20-25 minutes until the top is lightly golden. Serve right away.
