A tasty summer dish with a twist on the classic prawn and avocado roll, evoking memories of seaside family vacations.
Ingredients:
  • 3 x 250-300g marron, split and cleaned.
  • 72.80 gm Extra Virgin Olive Oil
  • 2 cloves garlic, crushed and chopped
  • Sea salt, to taste
  • 371.25 gm whole egg mayonnaise
  • 125.00 ml fennel tops or dill, roughly chopped
  • 125.00 ml parsley, roughly chopped
  • Zest, 1 lemon
  • 4 soft long rolls, split
  • 2 ripe avocados, sliced
  • 2 baby cos lettuce, whole leaves
Instructions:
  • Ignite and establish a fire in the pizza oven (this recipe can alternately be prepared on a covered barbecue or in a home oven).
  • Drizzle olive oil, garlic, and salt over marron flesh. Bake in the oven for 10 minutes until the meat gently pulls away from the shell.
  • Prepare the herbed mayo by mixing all ingredients in a small bowl, season to taste, and store in the fridge until ready to use.
  • Prepare the marron rolls by delicately separating the marron flesh from the shell and combining it with herbed mayo, avocado, and fresh crisp lettuce in soft rolls.
