Gluten-free hazelnut bikkies with sweet dried fruit and maple syrup.
Ingredients:
  • 155g (1 1/2 cups) hazelnut meal
  • 80g dried figs, finely chopped
  • 40.00 ml raw cacao nibs
  • 5.00 gm gluten-free baking powder
  • 0.63 gm ground cinnamon
  • 60ml (1/4 cup) melted coconut oil
  • 67.50 gm maple syrup
  • 8.40 gm solidified coconut oil
  • 8.50 gm maple syrup
  • 1 tsp raw cacao powder
Instructions:
  • Preheat your oven to 175C/155C fan forced and prepare a large baking tray by lining it with baking paper.
  • In a bowl, mix hazelnut meal, figs, cacao nibs, baking powder, cinnamon, and salt. Create a well in the center and add oil and maple syrup. Stir well to combine. Shape heaped tablespoonfuls of the mixture into balls, then flatten and place on a tray. Bake for 20 minutes until golden. Let cool on trays before enjoying.
  • Create the drizzle by combining oil and maple syrup in a heatproof bowl. Microwave on Medium-High for 30 seconds, then mix in the cacao powder. Let it sit for 10 minutes to thicken, stirring occasionally.
  • Drizzle the mixture over the biscuits and let it rest to firm up.
