Savory chicken stew with rich flavors of onions, garlic, and mushrooms, perfect for cozy nights.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 2 cloves garlic, pressed
  • 1 cup cremini mushrooms, sliced
  • 1 tablespoon tomato paste
  • 1.3333333730698 cups water
  • 0.5 teaspoon dried marjoram
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon paprika
  • 0.25 teaspoon dried sage
  • 1 pinch cayenne pepper
  • salt and ground black pepper to taste
  • 0.5 pound skinless, boneless chicken breast halves, cut into bite-size pieces, or more to taste
  • 1 teaspoon cornstarch
  • 1 teaspoon cold water, or as needed
Instructions:
  • In a stockpot over medium-low heat, sauté onion, celery, carrots, and garlic in olive oil until onion is translucent, approximately 10 minutes. Stir in mushrooms and cook until slightly tender, about 5 minutes.
  • Combine tomato paste and 1 tablespoon of water in a bowl, thinning out the tomato paste. Add the remaining water, marjoram, rosemary, paprika, sage, bay leaf, cayenne pepper, and black pepper. Stir until well combined.
  • Combine tomato paste mixture with onion mixture, then add the chicken. Bring everything to a boil, reduce the heat, cover, and simmer for about 40 minutes until chicken is cooked through and vegetables are tender.
  • Combine cornstarch and cold water in a bowl until smooth. Add the cornstarch mixture and salt to the stew, then bring to a boil and simmer until thickened, 5 to 10 minutes.
