Chewy chocolate chip quinoa granola bars with sweet applesauce and honey, perfect for a quick homemade snack.
Ingredients:
  • 4 cups quinoa flakes
  • 2 cups almond flour
  • 0.25 teaspoon flax seeds
  • 1 teaspoon salt
  • 1 cup honey
  • 1 cup applesauce
  • 1 cup chocolate chips
  • 4 teaspoons vanilla extract
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease a rimmed baking sheet.
  • In a large bowl, mix together quinoa flakes, almond flour, flax seeds, baking powder, and salt.
  • Combine honey, applesauce, chocolate chips, eggs, and vanilla extract in a separate bowl. Incorporate into quinoa flake mixture using your hands until well combined. Press evenly onto a prepared baking sheet with hands or a spatula.
  • Place in the heated oven until lightly golden, for approximately 15 minutes. Allow to cool for 20 minutes before slicing into 36 bars.
