Try a nutritious turmeric sweet potato soup - comforting, immune-boosting lunch option.
Ingredients:
  • 1 chicken style stock cube
  • 200g chicken breast
  • 400g pkt Hart & Soul Sweet Potato Ginger Soup with Turmeric
  • 55g (1/3 cup) roasted sweet potato
  • 45g (1/4 cup) canned chickpeas, rinsed, drained
  • 20g baby spinach
  • Fresh continental parsley leaves, to serve (optional)
Instructions:
  • In a saucepan, bring 750ml (3 cups) water to a boil. Stir in the stock cube until dissolved. Add chicken and simmer covered on low heat for 12-15 minutes until cooked through. Let it rest in the pan for 5 minutes before transferring to a plate.
  • Cut the poached chicken in half, adding one half to the soup and setting the other half aside for later use.
  • Follow the packet directions to heat the soup. Shred the chicken and mix it in with sweet potato, chickpeas, and spinach until warmed through. If needed, microwave again. Season to taste.
  • Garnish soup with optional parsley before serving.
