Hearty vegetable-filled chicken casserole with crispy golden chicken, a comforting and satisfying dinner winner.
Ingredients:
  • 40g (1/4 cup) plain flour
  • 4 chicken thighs cutlets, skin off, bone in
  • 18.20 gm extra virgin olive oil
  • 200g Swiss brown mushrooms, halved
  • 6 French shallots, peeled, halved
  • 1 carrot, peeled, halved lengthways, thinly sliced
  • 3 garlic cloves, crushed
  • 20.00 ml fresh lemon thyme leaves
  • 500ml (2 cups) chicken stock
  • 150g green beans, trimmed, thickly sliced diagonally
  • 3 stalks kale, trimmed, leaves coarsely torn
  • 21.00 gm fresh lemon juice
Instructions:
  • On a plate, spread out the flour. Coat the chicken in the flour, shaking off any extra. Save any remaining flour for later use.
  • In a large saucepan over medium-high heat, heat half of the oil until shimmering. Add the chicken and cook each side for 4 minutes, or until beautifully golden. Then, transfer the chicken to a plate.
  • Pour in the remaining oil and allow it to sizzle in the heated pan. Toss in the mushroom, shallot, carrot, garlic, and most of the thyme. Sauté for 5 minutes until they become tender. Fold in the reserved flour until fully incorporated. Slowly pour in the stock and 165ml (2/3 cup) water while stirring continuously until a smooth consistency forms.
  • Add the cooked chicken back into the pan and let it come to a boil. Lower the heat to medium, cover the pan, and let it simmer for 25 minutes until the chicken is fully cooked. Then, mix in the beans and kale and cook uncovered for an additional 5 minutes until everything is heated through. Finish by stirring in the lemon juice, seasoning with pepper, and serving the dish sprinkled with the remaining thyme.
