Whip up tasty, nutritious turkey mince nachos for the family.
Ingredients:
  • 8 wholegrain tortillas, cut into 8 triangles
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 500g turkey mince
  • 10.00 gm ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp ground chilli
  • 500ml beef stock
  • 400g can red kidney beans
  • 44.40 gm tomato paste
  • 250.00 ml no-fat Greek-style yoghurt
  • 1 garlic clove, crushed
  • 1 tsp finely grated lime rind
  • 21.00 gm lime juice
  • 1 avocado, finely chopped
  • 2 tomatoes, finely chopped
  • 125.00 ml coriander leaves
  • 165.00 ml grated light mozzarella
Instructions:
  • Preheat your oven to 200C (180C fan-forced) and lightly spray 2 baking trays with oil. Arrange tortilla triangles in a single layer on the trays, lightly spray them with oil, and bake for 5-6 minutes until golden. Let them cool on a wire rack.
  • Begin by heating oil in a large frying pan. Sauté onion until soft for about 5 minutes. Increase heat, then add turkey mince and cook until browned, breaking up any lumps for around 3 minutes. Add cumin, coriander, and chili, cook for 1 minute while stirring. Pour in beef stock, beans, and tomato paste, bring to a boil, then simmer gently for 10 minutes to thicken.
  • In a small bowl, mix together yogurt, garlic, lemon zest, and lemon juice. Season with salt and pepper. In another small bowl, combine avocado, tomato, and fresh coriander.
  • Arrange a layer of tortilla chips on a platter, top with the turkey mixture, sprinkle with cheese, and cook under a preheated grill for 1-2 minutes until the cheese melts. Finish by adding the avocado mixture and a dollop of lime yogurt before serving.
