Impress your loved ones with a lighter shepherd's pie using turkey and cauliflower!
Ingredients:
  • 2 heads cauliflower, stemmed and chopped
  • 0.25 cup Greek yogurt
  • 1 (14.5 ounce) can chicken broth, or as needed
  • 2 pounds ground turkey
  • 2 cloves garlic, chopped
  • 2 (1.25 ounce) packages beefy onion soup mix
  • 2 tablespoons all-purpose flour
  • 0.25 cup water, or as needed
  • 2 (8 ounce) bags frozen corn
  • 1 cup shredded fat-free Cheddar cheese
  • 0.25 cup french-fried onions, or to taste
Instructions:
  • Preheat the oven to a piping hot 450 degrees F (230 degrees C).
  • In a large skillet, warm olive oil over medium heat. Cook cauliflower, stirring occasionally to avoid browning, until easily mashable with a fork, about 8 to 10 minutes. Transfer to a bowl, mix in Greek yogurt, and mash. Gradually add chicken broth while mashing until smooth. Season with salt and pepper.
  • In a large nonstick skillet over medium-high heat, brown and crumble ground turkey with garlic for 5 to 7 minutes. Discard grease. Mix in soup mix and flour until combined, then gradually stir in water until creamy. Simmer until thickened for 2 to 3 minutes.
  • Evenly distribute the turkey mixture in a 9x13-inch casserole dish. Top it with layers of frozen corn, cauliflower mixture, and Cheddar cheese.
  • Place in the preheated oven for 15 minutes, then add a generous topping of french-fried onions and bake for an additional 5 minutes until golden brown. Rest briefly before serving.
