Effortlessly savor a hearty lamb and lentil slow-cooker dish bursting with flavor.
Ingredients:
  • 1 large brown onion, chopped
  • 2 large carrots, peeled, chopped
  • 2 celery stalks, chopped
  • 250.00 ml dried brown lentils, rinsed
  • 2.50 gm ground ginger
  • 1 tsp ground coriander
  • 5.00 gm ground cumin
  • 2 tsp dried mint
  • 2 tsp lemon rind, finely grated
  • 2 garlic cloves, crushed
  • 8 French-trimmed lamb shanks
  • 1 cinnamon stick
  • 500.00 ml chicken consomme
  • 2 x 400g cans chopped tomatoes
  • Couscous, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • Add onions, carrots, celery, and lentils to a 7-liter slow-cooker. Mix in ginger, coriander, cumin, mint, lemon zest, and garlic. Include lamb shanks and cinnamon. Pour in consomme and tomato. Season with salt and pepper before covering with lid.
  • Set the cooker to low heat and let cook for 8 hours or until the lamb is tender, remembering to turn the shanks every 2 hours. Once done, skim and discard any fat from the surface. Serve alongside couscous and fresh coriander.
