Cozy up with a savory lamb and veggie soup that fills your home with delicious scents and satisfies your hunger!
Ingredients:
  • 18.20 gm olive oil
  • 6 Lamb Slow Cook Chops
  • 1kg pkt Soup Starter kit
  • 1l chicken stock
  • 400g can diced tomatoes
  • Flat-leaf parsley leaves, to serve
  • Sliced Multigrain Sourdough Vienna, to serve
Instructions:
  • In a large deep saucepan over medium-high heat, heat the oil until shimmering. Brown the lamb in two batches, turning occasionally, for about 5 minutes or until evenly browned. Transfer the lamb to a plate.
  • Unleash the vibrant vegetables into the sizzling pan. Stir and sauté for 5 minutes until they begin to caramelize. Reunite the juicy lamb with the mixture, along with the stock, tomato, and 2 cups (500ml) water. Let it all bubble beautifully. Lower the heat, cover, and gently simmer for 2 hours until the lamb becomes melt-in-your-mouth tender. Finish off with a touch of seasoning to elevate the flavors.
  • Garnish the soup with fresh parsley and pair it with warm, crusty bread.
