Delicious grilled meatloaf stuffed with sautéed veggies, bursting with rich flavors.
Ingredients:
  • 2 pounds ground beef
  • 2 tablespoons barbeque seasoning
  • 1 tablespoon pureed chipotle peppers in adobo sauce
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon barbeque seasoning
  • 1 tablespoon butter
  • 0.5 bell pepper (any color), chopped
  • 1 (4 ounce) package sliced fresh mushrooms
  • 1 tablespoon minced garlic
  • 1 cup shredded Cheddar cheese
  • 0.5 cup barbeque sauce
Instructions:
  • Preheat the outdoor grill on high heat and lightly oil the grate once hot.
  • Combine ground beef, 2 tablespoons of barbeque seasoning, and chipotle peppers in adobo sauce in a bowl. Divide the mixture in half and shape each half into large rectangles of different sizes. Place the rectangles on large sheets of aluminum foil.
  • Combine the cream cheese with 1 teaspoon of barbeque seasoning, then spread it over the smaller, thicker meat rectangle.
  • Melt butter in a skillet over medium-high heat. Sauté onion, bell pepper, mushrooms, and garlic in the fragrant butter until onion is softened. Spread over the cream cheese mixture and sprinkle with Cheddar cheese.
  • Gently layer the thinner rectangle of meat on top of the cream cheese and vegetable layer, using the foil to help flip it over. Seal the edges of the loaf with your hands to prevent any filling from escaping. Fold the foil edges up to create a bowl shape to catch any grease while grilling. Brush the loaf with BBQ sauce on top.
  • Grill the loaf until cooked through, about 30 minutes. Slice into six even pieces before serving.
