Vegan meringue cookies made with chickpea liquid as a substitute for egg whites in just 3 ingredients.
Ingredients:
  • 0.75 cup aquafaba
  • 0.5 cup white sugar
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 250 degrees Fahrenheit (120 degrees Celsius) and line two baking sheets with parchment paper.
  • Using an electric mixer, whip aquafaba in a large bowl until stiff peaks form, about 10-13 minutes. Gradually add sugar, whisking in one heaping tablespoon at a time until fully incorporated. Mix in vanilla extract.
  • Use a piping bag or spoon to place tablespoons of the mixture onto the lined baking sheets.
  • Bake in the preheated oven for 70 minutes until firm to the touch. Allow to rest on the baking sheets for 2 minutes before transferring to wire racks to cool completely for 25 minutes.
