Herb, Tomato, Olive, and Caper Sauce

Delicious herb and tomato sauce with olives and capers. Perfect for dipping, tossing with cherry tomatoes and mozzarella, or drizzling over grilled meats, tofu, or veggies.
Ingredients:
  • 2 cups packed fresh basil
  • 2 tablespoons packed fresh oregano
  • 1 tablespoon packed fresh tarragon
  • 1 tablespoon lemon zest (from 3 lemons)
  • 1/4 cup pitted Greek olives, chopped
  • 2 tablespoons capers, drained
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup finely chopped oil-packed sun-driedtomatoes
  • Black pepper potato chips and/or crudités,such as halved radishes, endive leaves, halved baby carrots, mini bell peppers,cucumber slices, and/or snap peas, for serving
Instructions:
  • Finely chop basil, oregano, tarragon, and lemon zest in a food processor. Add olives and capers; pulse together. Drizzle in olive oil, vinegar, salt, and pepper; pulse until a saucy paste forms. Gently fold in tomatoes. Enjoy with potato chips and/or crudités.
  • Store in an airtight container in the fridge for up to 3 days or freeze for up to 1 month.
