Elevate your salad game with this refreshing green recipe.
Ingredients:
  • 6 (about 140g each) green zucchini, ends trimmed
  • 385g (2 1/2 cups) frozen peas
  • 60g butter
  • 3 garlic cloves, crushed
  • 62.50 ml finely chopped fresh continental parsley
  • 62.50 ml finely chopped fresh dill
  • 60ml (1/4 cup) fresh lemon juice
Instructions:
  • Peel the zucchini into thin ribbons using a vegetable peeler. Steam the zucchini and peas in a basket over simmering water for 4-5 minutes until tender.
  • In a non-stick frying pan, melt butter over medium-high heat until it turns golden, about 4-5 minutes. Remove from heat, stir in garlic, and let it sit for 1 minute to enhance the flavors before using.
  • Combine the zucchini and peas in a large serving bowl. Drizzle with the butter mixture. Sprinkle over the parsley, dill, and lemon juice, then gently toss together. Season with salt and pepper to taste.
