Herb and pistachio couscous

Delicious nutty couscous, a perfect pairing for grilled seafood or poultry.
Ingredients:
  • 375.00 ml couscous
  • 375.00 gm boiling water
  • 125.00 ml chopped fresh mint leaves
  • 125.00 ml chopped fresh coriander leaves
  • 250.00 ml chopped fresh flat-leaf parsley leaves
  • 1 small red onion, finely chopped
  • 250.00 ml pistachio kernels, toasted
  • 36.40 gm olive oil
  • 65.63 gm orange juice
Instructions:
  • In a heatproof bowl, add couscous and boiling water. Cover and let stand for 5 minutes until water is absorbed. Fluff the couscous with a fork to separate grains, then let cool for 5 minutes before serving.
  • Finely chop the herbs and onion, then add all remaining ingredients. Season with salt and pepper, toss to combine, and serve.
