Irresistible homemade chicken nuggets paired with crispy oven-baked wedges and fresh salad, perfect for a kid-friendly meal.
Ingredients:
  • 1 tsp dried mixed herbs
  • 200g breadcrumbs
  • salt and cracked black pepper
  • flour, for dusting
  • 2 eggs, lightly beaten
  • 3 Free Range Chicken Breasts, trimmed and cut into 3cm cubes
  • lemon wedges, to serve
Instructions:
  • Preheat the oven to 210°C. In a large bowl, combine mixed herbs, breadcrumbs, salt, and pepper. Set aside. Place flour in one bowl and eggs in another. Dust chicken cubes with flour, then dip in eggs and breadcrumbs, ensuring they are well coated.
  • After coating all the chicken, heat some oil in a large non-stick frying pan. Cook the chicken in batches until golden brown. Then, transfer the cooked chicken to a baking tray lined with parchment paper and bake in the oven for 4-5 minutes until fully cooked. Serve the chicken with lemon wedges and a side of whole egg mayonnaise for dipping. Enjoy!
