Herb-crusted fish with roasted asparagus

Herb-crusted fish with a side of asparagus, a nutritious and flavorful meal rich in omega-3.
Ingredients:
  • 125.00 ml chopped mixed fresh herbs (such as parsley, mint, basil and chives)
  • 2 tsp finely grated lemon rind
  • 6 (about 150g each) firm white fish fillets (such as ling or perch)
  • 3 bunches asparagus, woody ends trimmed
  • Olive oil spray
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200°C. Mix the herbs and lemon rind on a plate. Gently press both sides of the fish into the herb mixture to cover.
  • Prepare two baking trays with non-stick baking paper. Arrange the asparagus in a single layer on the trays. Lightly coat with olive oil spray and season with salt and pepper. Roast in the oven for 6 minutes until vibrant green and tender-crisp.
  • Heat a large non-stick frying pan over high heat and lightly spray with olive oil. Cook half of the fish for 2-3 minutes on each side until golden and flakes easily with a fork. Transfer to a plate and cover with foil to keep warm. Repeat the process with the remaining fish, reheating and spraying the pan between batches.
  • Arrange the asparagus on individual serving plates, place the fish on top, and serve with lemon wedges.
