Boost your vitamin A intake with a vibrant medley of fresh veggies, herbs, and steam!
Ingredients:
  • 2 medium carrots, sliced (1 cup)
  • 4 medium zucchini, cut into julienne strips (3 cups)
  • 1 tablespoon chopped fresh or 1 teaspoon dried sage leaves
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried dill weed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive or vegetable oil
  • 2 teaspoons lemon juice
Instructions:
  • Place a steamer basket in a 2-quart saucepan and add 1/2 inch of water (water should not touch the bottom of the basket). Place the carrots in the basket, cover tightly, and bring to a boil. Reduce the heat and steam the carrots for 3 minutes. Then add the zucchini and steam for an additional 4 to 6 minutes until both vegetables are crisp-tender.
  • 1. Heat oil in a 12-inch skillet over medium heat. 2. Add carrots, zucchini, and remaining ingredients. 3. Cook uncovered for 2 to 3 minutes, stirring gently, until hot.
