Herbed salmon tarts

Create delicious salmon tartlets for a satisfying snack.
Ingredients:
  • Canola oil, to grease
  • 12 slices day-old omega-3 enriched wholemeal bread
  • 3 omega-3 enriched eggs
  • 41.20 gm reduced-fat milk
  • 1 x 210g can red salmon, drained, skin removed, flaked
  • 40.00 ml finely chopped fresh chives
  • 40.00 ml finely chopped fresh dill
Instructions:
  • Preheat the oven to 200°C. Grease twelve 80ml (1/3 cup) non-stick muffin pans with oil. Trim crusts and cut 2cm off each corner of bread slices. Gently flatten bread slices with a rolling pin, then line the prepared pans with the slices.
  • Place the bread cases in the oven and bake them until they are crisp and golden, which should take around 10 minutes. Once baked, remove them from the oven and transfer them to a wire rack to cool slightly. Remember to then reduce the oven temperature to 180°C.
  • Whisk eggs and milk in a jug. Combine salmon, chives, and dill in a bowl. Place bread cases back in muffin pans. Distribute salmon mixture among cases. Pour egg mixture into cases. Bake for 20 minutes until set. Serve warm or at room temperature.
