Decadent gluten-free brownie with a twist: soy sauce adds rich caramel flavor.
Ingredients:
  • 1 stick (8 tablespoons) unsalted butter
  • 1 cup semisweet or dark chocolate bits
  • 1 cup almond meal
  • 3 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 3 large eggs
  • 1 cup brown sugar
  • 3 to 4 teaspoons tamari or gluten-free soy sauce
Instructions:
  • Preheat the oven to 350°F and prepare the baking pan by greasing and lining a 9-inch square pan.
  • Create a makeshift double boiler by placing the butter and chocolate in a large glass bowl over a pot of simmering water. Ensure the bowl doesn't touch the water. Melt the mixture until smooth, then let it cool for 5 minutes before using.
  • In a separate bowl, blend the almond meal, cocoa powder, and baking powder until well mixed.
  • In a separate bowl, whisk together the eggs, brown sugar, vanilla extract, and soy sauce until well combined.
  • Slowly whisk the egg mixture into the cooled chocolate until well combined, then gently fold in the dry ingredients.
  • Pour the batter into the pan, bake for 25 minutes, then cool completely in the fridge (preferably overnight for easier handling).
  • Slice into 12-16 portions according to your preference. Keep fresh in a sealed container in the refrigerator for up to one week.
