Ingredients:
  • 3 eggs
  • 2 egg whites
  • 0.5 cup milk
  • 1 cup all-purpose flour
  • 2 tablespoons cold water
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C), then add 1 teaspoon of olive oil to each of the 6 muffin cups.
  • Whisk eggs, egg whites, and milk in a glass bowl until perfectly smooth.
  • Microwave egg mixture until warm, approximately 1 minute.
  • Incorporate flour into the egg mixture until a smooth batter forms.
  • Place muffin cups in the preheated oven until the oil is smoking, which should take 2 to 3 minutes.
  • Gently mix chilled water into the batter. Fill each muffin cup with 1/4 cup of the batter.
  • Bake in the oven until puffed up and cooked through in the middle, approximately 25 minutes.
