Hiyashi Chuka Noodles

Chilled ramen noodles tossed in spicy chili sauce with refreshing cucumber, carrot slices, ham, and egg. A popular Japanese cold noodle salad perfect for a hot day.
Ingredients:
3tablespoons soy sauce
2tablespoons white sugar
5tablespoons chicken stock
1teaspoonsesame oil
0.5 teaspoonchili oil
2 (3 ounce) packagesramen noodles
1egg, beaten
0.5cucumber, julienned
1carrot, grated
1slice cooked ham, cut into thin strips
0.25 sheet nori, cut into thin slices
1tablespoonhot Chinese mustard
Instructions:
Combine soy sauce, sugar, vinegar, chicken stock, sesame oil, and chili oil in a small bowl. Stir until sugar dissolves. Set aside.
Start by boiling water in a saucepan. Cook the ramen noodles for 2 minutes, then drain and refrigerate until cold. In the meantime, heat a small nonstick skillet over medium heat. Pour in the beaten egg, spread it thinly across the pan, and fold it in half once firm. Remove from the pan and slice into thin strips. Enjoy!
Place chilled noodles on plates, arrange individual portions of egg, cucumber, carrot, and ham on top. Drizzle sauce, sprinkle with crumbled nori, and serve with a side of hot mustard.
