Holly's Chicken Cordon Bleu Casserole

Decadent casserole with Swiss cheese, chicken, mushrooms, ham, and crispy corn flake topping.
Ingredients:
  • 4 cups cornflake crumbs
  • 1 cup grated Parmesan cheese
  • 0.25 cup butter, melted
  • 10 cooked skinless, boneless chicken breast halves - cut into strips
  • salt and ground black pepper to taste
  • 6 cups shredded Swiss cheese
  • 1 pound cooked ham, diced
  • 0.5 pound sliced fresh mushrooms
  • 1 bunch green onions, sliced
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 2 tablespoons butter, melted
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and generously grease a 9x13-inch baking dish.
  • Combine corn flake crumbs, Parmesan cheese, and 1/4 cup of melted butter in a large bowl. Spread 2/3 of the mixture into the prepared baking dish. Arrange half of the chicken breast strips on top of the crumb base, season with salt and black pepper. Layer with half of the Swiss cheese, ham, mushrooms, and green onions.
  • Combine the cream of chicken soup and sour cream, then spread it over the green onion layer. Layer the remaining chicken strips and Swiss cheese on top. Finish by sprinkling the remaining crumb mixture and optional 2 tablespoons of melted butter on top.
  • Cover the casserole with foil, bake in a preheated oven for 45 minutes. Remove the foil and bake for an extra 15 minutes until the casserole is bubbling, cheese is melted, and crumb topping is golden brown.
