Homemade Cherry Ice Cream

Indulgent cherry ice cream with a hint of balsamic vinegar, made simply with fresh cherries, cream, milk, vanilla, and a touch of lemon juice.
Ingredients:
  • 1.25 pounds fresh cherries, pitted and quartered
  • 1 cup white sugar, divided
  • 3 tablespoons lemon juice
  • 1 tablespoon balsamic vinegar
  • 2 cups heavy cream
Instructions:
  • In a bowl, mix together cherries, sugar, lemon juice, and balsamic vinegar until well combined. Allow the mixture to sit for 2 hours. Drain the mixture, saving the juice.
  • Crush half of the cherries using a fork or blend into a puree.
  • In a bowl, whisk together milk and remaining sugar until sugar dissolves, about 1 to 2 minutes with an electric mixer. Stir in cherry juice, cream, pureed cherries, and vanilla extract until fully mixed.
  • Transfer the mixture to an ice cream maker and freeze for 20 minutes following the manufacturer's instructions. After that, add the remaining quartered cherries and freeze for an extra 5 minutes to achieve a nice and creamy texture. For a firmer consistency, transfer the ice cream to an airtight container and freeze for about 4 hours until firm. Before serving, take it out of the freezer 10 minutes in advance.
