Homemade Chicken Stew

Creamy homemade chicken stew with fresh veggies and tender chicken bites.
Ingredients:
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 4 medium carrots, peeled and diced
  • 3 ribs celery, diced
  • 2 tablespoons minced garlic
  • salt and ground black pepper to taste
  • 2 tablespoons salted butter
  • 2 cups chicken broth
  • 1 teaspoon ground thyme
  • 1 teaspoon salt, or more to taste
  • 0.5 teaspoon ground black pepper, or more to taste
  • 0.25 teaspoon ground turmeric
  • 1 cup frozen peas
  • 0.75 cup frozen corn
  • 2 cups diced cooked chicken
Instructions:
  • In a large soup pot, heat olive oil over medium to medium-high heat. Cook onion, carrots, and celery until they begin to soften and caramelize, about 10 minutes. Stir in garlic and cook for 1 minute. Season generously with salt and pepper.
  • Melt butter in the pan, then stir in flour until veggies are evenly coated. Pour in broth and milk, stirring until combined. Bring to a simmer, then add thyme, salt, pepper, and turmeric. Mix in peas, corn, and chicken. Simmer for 10-15 minutes. Adjust seasonings to taste before serving.
