Homemade Gluten-Free Tortillas

Grain-free tortilla/flatbread alternative recipe.
Ingredients:
  • 1/2 cup plus 2 tablespoons dark flax meal
  • 1 tablespoon coconut flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon chili powder
  • 3 tablespoons hot water
  • 1 teaspoon olive oil
Instructions:
  • Combine 1/2 cup of flax meal with coconut flour, salt, and chili powder in a small bowl. Set aside.
  • In a separate small bowl, whisk together the remaining 2 tablespoons of flax meal, hot water, and oil. Pour the mixture into the dry ingredients and stir until well combined.
  • Transfer the sticky dough onto a work surface. Knead with gloved hands or in a plastic food-storage bag for about 5 minutes until it becomes smooth. Then, divide the dough into 4 equal pieces.
  • Shape each portion of dough into a round ball and gently press down to slightly flatten.
  • Place each dough piece between two sheets of parchment paper or waxed paper, and roll into 5- to 6-inch circles.
  • Preheat a 10-inch nonstick skillet over medium-high heat. Cook tortillas in the skillet one at a time for 1 minute on each side, until they puff slightly.
