Spicy jalapeno and sweet bell peppers create a zesty green jelly perfect for pairing with creamy cream cheese on crackers.
Ingredients:
  • 3 green bell peppers, seeded and finely chopped
  • 2 (4 ounce) cans diced green chile peppers, drained
  • 1.5 cups distilled white vinegar
  • 6.5 cups white sugar
  • 0.5 teaspoon cayenne pepper
  • 1 (6 fluid ounce) container liquid fruit pectin
  • 5 drops green food coloring
Instructions:
  • In a large pot, mix together bell peppers, chile peppers, vinegar, sugar, and cayenne pepper. Bring to a boil over medium heat, stirring occasionally. Once the mixture reaches a vigorous boil, add the pectin and cook for an additional 5 minutes. Remove from heat and add green food coloring, if preferred.
  • Carefully pour the jelly into the hot, sterilized jars, making sure to leave a 1/4 inch space at the top. Seal the jars tightly and submerge them in a boiling water bath for 5 to 10 minutes to seal them perfectly.
