Toss cherry tomatoes and spiral pasta with parmesan, basil, and olive oil for a flavorful pasta dish.
Ingredients:
  • 1 bunch fresh basil leaves, picked
  • 40.00 ml pine nuts, toasted
  • 2 cloves garlic, chopped
  • 40.00 ml finely grated parmesan cheese
  • 56.88 gm extra virgin olive oil
  • 500g spiral pasta
  • 250g grape tomatoes, or cherry tomatoes
Instructions:
  • Combine the tomatoes and toss gently. Serve at room temperature.
  • Combine the basil, pine nuts, garlic, and cheese in a food processor and pulse until finely chopped. While the processor is running, slowly drizzle in the oil until well combined. Season with salt and freshly ground black pepper to taste.
  • Cook pasta in a large pot of boiling water until perfectly firm to the bite. Drain the pasta in a colander and rinse under cold water to cool. Transfer the drained pasta into a spacious bowl and toss with pesto until evenly coated.
