Spicy-sweet cupcakes with vanilla-scented fruit sauce - a delicious double-decker treat!
Ingredients:
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1/2 cup butter or margarine, melted
  • 1/2 cup boiling water
  • 1/4 cup honey
  • 1/4 cup molasses
  • 1 egg, slightly beaten
  • 1/4 cup butter or margarine
  • 1 cup packed brown sugar
  • 5 medium cooking or baking apples, peeled, finely chopped (about 5 cups)
  • Dash salt
  • 1/2 cup whipping cream
  • 1/2 teaspoon vanilla
Instructions:
  • Preheat oven to 350°F. Line 12 regular-size muffin cups with paper baking cups. In a large bowl, combine flour, 1/2 cup brown sugar, baking soda, ginger, cinnamon, 1/2 teaspoon salt, and cloves. Mix in the remaining cake ingredients until well combined. Divide batter evenly among muffin cups.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan on a rack for 10 minutes, then remove from the pan and gently peel off the paper baking cups from the cakes.
  • In a 10-inch skillet, melt 1/4 cup of butter over medium-high heat. Add 1 cup of brown sugar, the apples, and a dash of salt. Cook for 4 to 5 minutes, stirring frequently, until the brown sugar dissolves and the mixture boils. Let it boil for 10 minutes, stirring occasionally, until the apples are tender and the syrup thickens. Then, stir in the whipping cream and bring it back to a boil. Boil for 3 minutes, stirring constantly until the mixture thickens and the apples are glazed. Remove from heat and stir in the vanilla.
  • Serve by cutting the cakes in half horizontally. Place the bottom halves on small dessert plates and spoon a generous tablespoon of topping over each half. Add the cake tops and drizzle another generous tablespoon of topping over each, allowing it to drip down the sides onto the plates.
