Simplify Hoppin' John using frozen black-eyed peas for luck and prosperity in the new year.
Ingredients:
  • 6 slices bacon, chopped
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 2 (12-ounce) packages frozen black-eyed peas
  • 4 cups reduced-sodium chicken broth
  • 2 cups cooked long grain rice
  • Chopped green onions
Instructions:
  • Collect all the ingredients needed for the recipe.
  • In a 6-quart Dutch oven over medium heat, crisp up the bacon for about 5 minutes. Place the bacon on a paper towel-lined plate to drain. Keep 1 tablespoon of drippings in the Dutch oven and discard the rest.
  • In a Dutch oven, sauté the onion, celery, green pepper, and garlic with salt, black pepper, thyme, and cayenne pepper until tender and slightly browned, approximately 5 minutes.
  • Combine the black-eyed peas and broth, bring to a boil, then simmer covered until tender but still slightly firm, approximately 20 minutes.
  • Reserve cooking liquid; drain.
  • Mix in the rice and bacon, and add just enough reserved liquid to achieve a saucy consistency. Season with more salt to taste, if desired. Top it off with green onions for a delicious finish.
