Southern-style Hoppin' John with black-eyed peas, greens, rice, and smoked ham hock for luck in the new year. Top with 3 peas for luck, fortune, and romance, and enjoy with cornbread.
Ingredients:
  • 1 cup dried black-eyed peas, sorted and rinsed
  • 1 cube vegetable bouillon
  • 0.25 cup hot water
  • 1 clove garlic, minced
  • 1 smoked ham hock
  • 2 bunches collard greens, chopped
  • 1 tablespoon dried oregano
  • 1 tablespoon red pepper flakes
  • 2 cups vegetable broth
  • 5 cups water, or as needed to cover
  • 1 cup long-grain white rice
  • salt and ground black pepper to taste
Instructions:
  • Place black-eyed peas in a large soup pot and cover with water. Bring to a boil and cook for 2 minutes. Reduce heat to low and simmer for 1 hour. Drain before using.
  • In a small bowl, mix the vegetable bouillon cube with 1/4 cup of hot water until dissolved. Pour the bouillon into the slow cooker along with black-eyed peas, onion, garlic, ham hock, collard greens, oregano, red pepper flakes, and vegetable broth. Add 5 cups of water to cover the ingredients. Cook on High for 5 hours. Stir in the rice and cook for another hour before serving.
  • Separate the meat from the ham hock, dice it, and add it back to the stew. Season generously with salt and freshly cracked black pepper.
