Hopscotch cake

Impress with a show-stopping birthday cake for the kids!
Ingredients:
  • 2 x 340g packets golden buttercake cake mix or 2 quantities Homemade buttercake (see related recipe)
  • 160g packet 100s and 1000s
  • 48 mini M&Ms (we used blue, red and yellow)
  • 250g butter, softened
  • 450.00 gm icing sugar mixture
  • 41.20 gm milk
  • Blue food colouring
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 7cm-deep, 20cm round cake pan and an 8-hole, 3/4 cup-capacity mini loaf pan, then line the bases and sides of both pans with baking paper.
  • For packet cakes, follow the packet instructions or homemade cakes recipe. Fill each mini loaf hole with 1/3 cup batter and pour the rest into the round cake pan. Bake the mini loaf pan for 20 minutes until done, then set aside. Bake the round cake pan for 45 minutes until cooked. Allow it to rest in the pan for 10 minutes, then turn out onto wire racks to cool. Enjoy!
  • With a serrated knife, even out the tops of the cakes as needed. Cut out an 18.5cm (base) semicircle from the round cake, then trim the top of the cake so it is level with the top of the loaves.
  • Make delicious icing: With an electric mixer, whip butter in a bowl until light. Slowly incorporate icing sugar and milk, continuing to beat until well blended.
  • Pour 1/4 cup of icing into a bowl and add blue color. Transfer the blue icing into a piping bag with a 2mm plain nozzle. Arrange the cake piece and loaves, cut-side down, on a board. Coat each piece with plain icing, then dip the sides into 100s and 1000s.
  • Arrange the pieces of cake on a cake board to create a hopscotch game. Use a piping bag to write 'HOME' on the rounded piece of cake and numbers on the other pieces. Add colorful M&Ms for decoration and presentation. Serve and enjoy!
