Tangy German potato salad, a warm and flavorful side dish for bratwurst.
Ingredients:
  • 5 pounds red potatoes, diced
  • 1 pound bacon
  • 2 sweet onions, diced
  • 4 cloves garlic, minced
  • 1 cup white vinegar
  • 0.5 cup water
  • 2 tablespoons white sugar
Instructions:
  • Add potatoes to a large pot filled with salted water and bring to a boil. Simmer on medium-low heat until potatoes are tender, approximately 20 minutes; drain and transfer to a slow cooker.
  • In a large skillet, cook the bacon over medium-high heat, turning occasionally, until crispy and browned, about 10 minutes. Transfer the cooked bacon to a plate lined with paper towels, crumble it, and mix it into the potatoes.
  • On medium heat, warm up the bacon drippings in the skillet. Sauté sweet onions until they're translucent, about 5 to 7 minutes. Stir in garlic and cook until fragrant, around 1 to 2 minutes. Pour this flavorful mixture over the potatoes and bacon.
  • Combine vinegar, water, sugar, and salt in a bowl. Pour the mixture over the potatoes and gently stir to mix.
  • Slow cook for 3 to 4 hours, stirring occasionally.
