Hot cross buns

Try making homemade hot cross buns for Easter - they're irresistible and far better than store bought ones!
Ingredients:
  • 200 ml semi-skimmed milk
  • 55 g unsalted butter
  • 2 x 7 g sachets of dried yeast
  • 455 g strong bread flour plus extra for dusting
  • 1 teaspoon mixed spice
  • 1 teaspoon cinnamon
  • 1 whole nutmeg for grating
  • 55 g caster sugar
  • 2 balls of stem ginger
  • 1 large free-range egg
  • 2 tablespoons plain flour
  • 55 g sultanas or raisins
  • 30 g dried cranberries
  • 2 tablespoons mixed peel
  • runny honey
Instructions:
  • - Heat milk and 50ml water in a small pan until warm. Melt butter in another pan. Transfer milk mixture to a bowl and mix in yeast. - Combine flour, sea salt, spices, nutmeg, sugar, and chopped stem ginger in a large bowl. - Make a well in the flour mixture and pour in melted butter, followed by yeast mixture. Add beaten egg and mix into a dough. - Knead dough on a floured surface for 10 minutes until soft and springy. Let it rise for an hour until doubled in size. - Knock air out of dough, add dried fruit and mixed peel, knead for 1-2 minutes. Preheat oven to 190ºC/375ºF/Gas 5, grease and line baking tray. - Divide dough into 12 pieces, roll into balls, place on tray, let rise for 30 minutes. - Mix plain flour and water to make a paste. Use it to make a cross on top of each bun. - Bake in preheated oven for 15-20 minutes until golden. Glaze with honey and cool on a wire rack. - Serve warm, sliced with butter.
