Make ahead hot cross buns for Easter - a huge success with Taste members!
Ingredients:
  • 375ml milk
  • 2 tsp (7g/1 sachet) dried yeast
  • 55g caster sugar
  • 60g butter, melted
  • 1 egg, lightly whisked
  • 675g 00 flour
  • 2.40 gm salt
  • 7.50 gm mixed spice
  • 170g sultana
  • 45g currants
  • 50g mixed peel
  • 80ml water
  • 170g apricot jam
Instructions:
  • In a small bowl, mix together the milk, yeast, and 1 tablespoon of sugar. Let it sit in a warm, draft-free spot for 10 minutes or until it becomes frothy.
  • In a jug, whisk together the milk mixture, butter, and egg. In a bowl, combine 4 cups (600g) of flour, salt, mixed spice, and remaining sugar. Add sultanas, currants, and mixed peel, stir to combine. Create a well in the center of the mixture. Pour in the milk mixture and use a wooden spoon to gently combine. Use your hands to form the dough.
  • Transfer the dough to a lightly floured surface and knead for 10-15 minutes until it becomes smooth and elastic. Then, place the dough in a bowl, cover it with a damp tea towel, and let it rise in a warm, draft-free spot for 1 hour or until it doubles in size.
  • 1. Preheat the oven to 200°C and grease a 23cm square cake pan. 2. Punch the dough down and knead on a lightly floured surface for 2-3 minutes until smooth and elastic. 3. Divide the dough into 16 even pieces and shape each into a ball. 4. Arrange the dough balls in the prepared pan side by side. 5. Let the dough rise in a warm, draft-free place for 30 minutes until it has risen by 2cm.
  • Combine the leftover flour and water in a small bowl until a smooth paste forms. Transfer the mixture to a small plastic bag and cut off a tiny corner. Squeeze out a continuous line down the center of each row of buns, making crosses lengthwise and widthwise. Bake in a preheated oven for 10 minutes, then lower the temperature to 180°C and bake for an additional 20 minutes or until golden and fully cooked (buns should sound hollow when tapped on the base).
  • Transfer the buns to a wire rack. In a small saucepan over high heat, melt the jam by cooking and stirring for 2 minutes. Strain the jam through a fine sieve. Brush the warm jam over the buns and serve with butter, or toast them for a delicious treat.
