Easter hot cross buns: fresh, spiced, and fruity tradition in every bite!
Ingredients:
  • 750.00 ml wholemeal plain flour
  • 250.00 ml plain flour, plus extra for kneading
  • 2 x 7g sachets dried yeast
  • 62.50 ml 100% apricot fruit spread, plus 62.50 ml extra
  • 3.75 gm MasterFoods® Mixed Spice
  • 250.00 ml mixed dried fruit
  • 300ml skim milk
  • 2 eggs, lightly beaten
  • 36.40 gm olive oil
  • Butter, at room temperature, to serve (optional)
  • 125.00 ml plain flour
  • 2.50 gm MasterFoods® Mixed Spice
  • 82.50 gm water
Instructions:
  • In a large bowl, mix together flours, yeast, fruit spread, mixed spice, and currants. Warm milk in a small saucepan over medium heat for 1 minute until lukewarm. Pour the warm milk, eggs, and oil into the fruit mixture. Use a flat-bladed knife to combine ingredients until dough almost comes together. Finish mixing with clean hands to form a soft dough.
  • Transfer the dough onto a floured surface and knead vigorously for 10 minutes until it becomes smooth. Place the dough in a lightly oiled bowl, cover it with plastic wrap, and let it sit in a warm, draft-free area for 1 to 1½ hours until it doubles in size.
  • Prepare a large baking tray with non-stick baking paper. Punch the dough down to its original size, then knead on a lightly floured surface until smooth. Divide the dough into 12 even portions and shape each into a ball. Arrange the balls on the prepared tray, spacing them about 1 cm apart. Cover with plastic wrap and let them rise in a warm, draft-free spot for 30 minutes until doubled in size. Preheat your oven to 180C/160C fan forced.
  • Prepare the flour paste by combining flour, mixed spices, and water in a small bowl until smooth. Adjust consistency by adding water if needed. Transfer the paste to a small snap-lock bag and cut a small corner off. Use the bag to pipe crosses onto the buns. Bake for 20 minutes, then brush the tops with extra fruit spread. Continue baking for 5 more minutes until the buns are golden and fully cooked.
  • Enjoy it warm or at room temperature and consider adding butter for extra flavor.
