Easter hot cross buns with raisins, currants, walnuts, and chocolate chips - a festive treat!
Ingredients:
375.00 gm self-raising flour
2.50 gm mixed spice
118.80 gm brown sugar
125g butter, melted and cooled
125.00 ml raisins
125.00 ml currants
62.50 ml mixed peel
57.50 gm golden walnuts, chopped
47.50 gm NESTLÉ BAKERS' CHOICE White Choc Melts, melted
2eggs
4.40 gm vanilla essence
Instructions:
Preheat your oven to 180°C (or 160°C fan). Prepare 12 large muffin pans with paper cases. In a large mixing bowl, sift together flour, spice, and brown sugar, then create a well in the center.
In a jug, combine milk, eggs, butter, and vanilla. Pour this mixture into the dry ingredients and gently mix with a rubber spatula. Fold in dried fruit and nuts carefully.
Divide batter evenly among muffin cups in pans. Bake for 20 minutes until muffins are golden and firm to the touch. Allow to cool on a wire rack.
Transfer the melted chocolate into a small ziplock bag. Snip off a corner, then drizzle a cross over each muffin. Allow the chocolate to set.
