Easter hot cross buns with raisins, currants, walnuts, and chocolate chips - a festive treat!
Ingredients:
  • 375.00 gm self-raising flour
  • 2.50 gm mixed spice
  • 118.80 gm brown sugar
  • 125g butter, melted and cooled
  • 125.00 ml raisins
  • 125.00 ml currants
  • 62.50 ml mixed peel
  • 57.50 gm golden walnuts, chopped
  • 47.50 gm NESTLÉ BAKERS' CHOICE White Choc Melts, melted
  • 2 eggs
  • 4.40 gm vanilla essence
Instructions:
  • Preheat your oven to 180°C (or 160°C fan). Prepare 12 large muffin pans with paper cases. In a large mixing bowl, sift together flour, spice, and brown sugar, then create a well in the center.
  • In a jug, combine milk, eggs, butter, and vanilla. Pour this mixture into the dry ingredients and gently mix with a rubber spatula. Fold in dried fruit and nuts carefully.
  • Divide batter evenly among muffin cups in pans. Bake for 20 minutes until muffins are golden and firm to the touch. Allow to cool on a wire rack.
  • Transfer the melted chocolate into a small ziplock bag. Snip off a corner, then drizzle a cross over each muffin. Allow the chocolate to set.
