Ingredients:
  • 6 Luxurious Spiced Fruit Hot Cross Buns
  • 375ml (1 1/2 cups) strong coffee, cooled
  • 450ml thickened cream
  • 250g carton mascarpone
  • 100g (1/2 cup) caster sugar
  • 60ml (1/4 cup) marsala
  • Dutch processed cocoa powder, to dust
Instructions:
  • Slice the hot cross buns horizontally and then cut each half into 3 strips. Pour the coffee into a shallow bowl.
  • Dip a hot cross bun piece in the coffee mixture, letting excess liquid drip off. Place in a 5cm-deep, 28 x 18cm dish. Repeat with half of the remaining bun pieces, creating a tidy layer in the dish. Gently press with a spoon to even out.
  • Using electric beaters, whip the cream, mascarpone, sugar, and marsala in a bowl until peaks form. Spread half of the mixture over the hot cross buns in the dish, then repeat with another layer of bun pieces and a final layer of the cream mixture. Cover and refrigerate for 8 hours or overnight to chill.
  • Create a cross pattern on the surface by arranging long strips of cardboard as a stencil. Dust with cocoa powder, then gently remove the cardboard strips. Serve and enjoy!
