Quick stovetop asparagus recipe ready in just 10 minutes!
Ingredients:
  • 1/2 pound asparagus (or up to a pound), thin, medium, or large
  • 1/4 teaspoon of salt
  • 1 garlic clove, cut in half (optional)
  • 1 strip of lemon peel (optional)
Instructions:
  • Prepare the asparagus: Remove any woody ends from the asparagus spears. For an elegant touch, consider using a vegetable peeler to peel the lower inch or two of medium or large asparagus spears.
  • In a large skillet, bring about 3/4-inch of water to a boil on high heat. Add salt and the cut garlic and lemon peel if using.
  • Prepare the asparagus: Place in a single layer and ensure it is covered in water. For thin asparagus, cook for 1-2 minutes; medium for 5 minutes; and large for 6-7 minutes, covering the pan if needed.
  • Give a quick cool water rinse to stop the cooking process, then place in a serving dish. Season with salt, pepper, a squeeze of lemon juice, and a drizzle of extra virgin olive oil or melted butter before serving.
