Spicy clams cooked with chile oil and fragrant Thai basil for a delicious and simple dish.
Ingredients:
  • 5 tablespoons vegetable oil
  • 5 cloves garlic, minced
  • 2 pounds small clams, thoroughly cleaned
  • 3 tablespoons Nam Prik Pao (roasted chile paste)
  • 3 tablespoons fish sauce
  • 3 Chee Fah chiles (mild red chiles)
  • 1 tablespoon white sugar
  • 1 cup Bai Kraprao (holy basil leaves), or to taste
Instructions:
  • 1. Preheat a large heavy-bottomed pan or wok over high heat, then add the oil and wait for 1 minute. 2. Sauté garlic in the hot oil until it turns golden brown, which takes about 1 minute. 3. Add clams and chile paste, stirring until clams are well coated.
  • Mix together the fish sauce, chiles, and sugar with the clams; stir and cook until the clams open, which will take about 5 to 10 minutes.
  • Add basil to the clam mixture and sauté until it wilts, approximately 1 minute.
